Production Process:
The raw coffee is directly imported from the countries of origin (Central America, Africa, Brazil and Asia); the jute sacks are stored for a short time in a specialized warehouse and directly delivered to our plants in Milan (Italy) and Mendrisio (Switzerland). Each sack is opened and the content put into our cleaning plant where a computerized system removes all the impurities in the raw product.
Once the coffee is cleaned, it is loaded and stored into various silos where a system of electronic weighing is employed. The product is ready for roasting, during which further cleaning is performed with suction of residual powders.
During roasting, which occurs for 15 minutes at a temperature of almost 200° by 3 roasting machines with an overall weight of 480kg, the coffee is cooked in tempered steel drums into which hot air is introduced by external electronically controlled burners. The entire roasting process is constantly monitored by specialized operators and controlled by an information technology system.
Once the roasting phase is over, the product is cooled in a special cooling basin with forced hot air suction in which the coffee is blended by mechanical blades for 10 minutes. It is then further cleared from the last impure residues with a suction system, depending on the specific weight of the product itself. Once this phase is terminated, the coffee is again weighed to record the natural loss and, with a vacuum system of air suction it is loaded into the various storage silos of the cooked product. It remains here for a few days to stabilize its properties.
